What is the best crew skills for a Jedi Sage?

I'll assume you're referring to crafting skills; the ideal gathering/mission skills will depend on which crafting skill you choose.

"Best" is in the eye of the beholder, and will depend at least in part on whether you want to be a healing Sage or a DPS Sage. That said, if you want to create equipment that your Sage can use, Synthweaving lets you create armor that the Sage can use, and Artifice lets you craft lightsabers.

I've should perhaps said "what crafting skill benefits me as a Jedi Sage?". I think I'm going healer. What kind of gather skill would I need for Syntweaving?

Yeah, I'd say Synthweaving is probably the best choice. Although if you want to go against the grain, a utility crafting skill like Biochem could be an interesting alternative. Biochem allows you to create things like medkits, performance-e......

With Artifice you make lightsaber hilts and color stones right? And with Archaeology you find items you need for Artifice? But I dont know what Treasute Hunting is.

What is Syntweaving? Some kind of light armor crafting?

It depends on what you want. Synthweaving is the armor crafting class for all force users (knights, warriors, consulars, inquisitors). You can craft light, medium, and heavy armor. I would suggest this profession as the items you make are pretty good and don't really take that long to get the mats for.

If you choose synthweaving, make sure you pick up archaeology as well because that is how you get the materials. I usually send my companions to gather while I am in PvP or groups.

You could also get artiface (which also uses archaeology), which makes crystals and modifications for sabers (mainly). Either or.

Can I craft all kinds of gear? Like head slot, chest slot, feet slot etc? And can i craft armor and sell or give to ppl?

Its highly suggested that you take as your three skills as Synthweaving, Archeology, and Underworld Trading if you intend on taking the Jedi Consular route. You can make many different armor pieces with Synthweaving, you get the base level materials with Archeology, and you get the higher end materials needed through Underworld Trading.

Out of your 5 individual crew members only Zenith has a critical in something that you would personally use, that being Underworld Trading. It compliments well with Qyzen Fess's bonus to Archeology efficiency and Nadia Grell's bonus to Synthweaving efficiency. Although the bonuses aren't spectacular, every little bit helps.
