Will you be able to dye your armour and weapons and vehicles in this game? What crew skill would that be? And what other customizable features might there be?

There are a system to make a matching color in your armor (using existing color on an armor) a few beta builds back. But the feature is turned off during the beta weekend. I'm guessing there is much work to be done for this feature by the devs.
So this feature probably wont appear at launch, perhaps in the future
No. You will be able to match armor to your chest piece, though. It's been temporarily disabled in testing, but it will be back.
There is an option to make all your other armor match the coloring of your chest piece, but I know of no other options to change your appearance beyond that.
The only way to currently change the color is match chest, which may or may not even make it into the game. It was turned off during the "open" beta weekend.
Nope!
Here's hoping that they do implement that at some point though, I thoroughly enjoyed that feature in Dark Age of Camelot. Admittedly, many people just dyed their gear black to blend in at night better, but it still allowed for a fair amount of customization.
I think it may be unlikely that this will be implemented however, since they don't want people running around in full pink gear.
From what i have seen, you can mod your gear, however i haven't seen any color options or massive effects to them aesthetically.
You can color your weapons, within limits. Like they have color crystals for lightsabers that change their color (some dark/light side points limiting) and i think for blasters you can color the shots.
Artifice is the profession for crystals when relating to lightsabers, not sure if it works on blasters, or if they were going to make armstech for that (heard another post saying artifice is for both, but haven't confirmed it with official source).
No vehicle dyes from what i have seen.
Droid companions can get customisation kits to change their appearance (mainly colours and patterns) but other companions recieve actual item packs that can have varying designs. These are the same as ordinary items, you replace any previous armour that character is wearing and a difference in stats will change the companions stats.
The latter is the same for players.
Hopefully, transmogrification will be implemented (change the appearance of a looted item to that of another looted item, such as the new WoW feature) or the SWG double equipment slots, one for stats, one for appearance (if only an item in the stats slot, that item design is shown).

Transmogrification would be very cool!
